With healthy food becoming more and more expensive, bargain shopping is a must. In my town, there’s a public culinary, baking and butcher school at Vancouver Community College where you can buy whatever the students are learning that day. Last week they made big garlicky meatballs at only $5.50 for 8. So good – as good as my favourite butcher, Sebastian. (Buy your meatballs at the best butcher in your area cuz it makes such a flavour difference to your dish. –Plus you might run into someone you know, which is always nice.)

Recipe 1: Quick Spaghetti & Zucchini Noodles with Big Meatballs

Ingredients

.Spaghetti noodles – Reduce regular quantity to make room for zucchini noodles
.Zucchini noodles, spiralized from 1 large or 2 small zucchinis
.Spaghetti sauce (I used Gord’s leftover romesco sauce, but go ahead and purchase a rich sugar-free sauce)
.Meatballs from your favourite butcher

Instructions

.Spiralize zucchini noodles and set aside.
.Fry meatballs or bake them in the oven.
.Heat spaghetti sauce in a small pot.
.Cook spaghetti. When pasta is al dente and a little on the hard side, remove from the hot water. Drain and lay on the warm spaghetti sauce.
.Drop zucchini noodles into the hot pasta water and let sit for 1 1/2 minutes. Drain zucchini noodles and add to the pasta and sauce. Toss gently and place on serving dish. Top with meatballs.

Recipe 2: Vinaigrette of Rice Vinegar, Olive Oil & Dijon Mustard

Ingredients

.Equal amounts Rice Vinegar & Olive Oil (My friend Paula says quality olive oil has a prominent expiration date on the front label.)
.Spoonful of Dijon Mustard, to taste

 

Instructions

.Pour vinaigrette ingredients into a jar with a secure lid and shake.
.Soak the hard ingredients (chopped sweet peppers, red onions and corn) in vinaigrette while you make dinner. Place the arugula leaves in serving bowl. Just before serving, pour the vinaigrette-veggie mix over the arugula.

 

Yikes! My bus stop looked like a disaster had happened

Crashed trucks, cement blocks overturned on my way home. It stopped me for a second. Whoa! They were just shooting a TV series. :)

Came across this mayhem on rounding the corner at the Canada Post office. Cars crashed and cement pillar debris abounded. Whoa! Turned out it was a set for a TV series.

 

Earlier in the day – Dragon Boating at False Creek

I said I would give dragon boating one full season and here it is. My first regatta is the Spring Sprint Regatta on May 8th. Yahoo! –Rotate, hang, pull! Right got it :)

There’s nothing like not letting down 19 people to motivate you to get serious about fitness. Holy cow. I mean, you feel so bad when you pull your paddle out of sheer exhaustion and everyone else is still paddling. I tell the person in front of me to pull harder while I take a rest. That always goes over well :)
